Thyme Pizza

Ingredients

Dough Preparation

  • 3 cups flour
  • 1 cup milk

  • ½ teaspoon salt

  • 1 teaspoon dry yeast

  • 3 tablespoons vegetable oil

Zaatar Preparation

  • ½ cup Zaatar mix

  • ¼ cup olive oil

  • Salt to taste

Cooking Instructions

  • Sift the dry ingredients together in a bowl. Make a well in the middle & add the oil. Add the milk & knead well until the dough separates from the bowl. Lightly dust a clean and smooth work surface with flour. Remove from the bowl & knead for another 10 minutes. Alternatively, knead using a food processor. Cover the dough, either in a bowl or wrapped in a plastic wrap, and let it rest for at least 1 hour.
  • Divide the dough into 8 parts. Roll each part into a ball & let rest for another 10 minutes. Dust the work surface with a bit of flour. Using a rolling pin, flatten each ball into a pie of approximately 10 cm diameter, roughly 3-5 mm thick.

  • In a small bowl, add the olive oil to the zaatar mix. Add salt to taste (most zaatar mixes are already salted but may require additional salting). Spread 1-2 teaspoons of the oil-zaatar mixture evenly onto each pie, pressing the mixture gently into the dough with your fingers.

  • Bake in preheated oven to 200o C for 8-10 minutes or until desired crispness.

  • Serve along with any or all of the following: fresh tomatoes, olives, mint leaves, cucumbers, and scallions.

  • Makes 8 individual thyme pizzas.

Shortcuts

Replace homemade dough with ready-made pizza dough. For a ready-made rectangular pizza dough of approximately 30 x 40 cm, spread the oil-zaatar mix on the ready-made dough evenly, pressing gently with your fingers. Pre-cut the dough into smaller rectangles using a pizza slicer before baking. Bake according to instructions. You may need to reduce the cooking time by a couple of minutes.

For even a quicker way, spread the oil-zaatar mix on top of pocketless pita bread or partially baked pita that can be found in supermarkets in the US and Europe. Bake according to package instruction.
